Laksa Risotto
  • 2tsp Butter
  • 1/4 Lemongrass
  • Oil
  • 150g Laksa Rempah
  • 1.5cups Arborio Rice
  • 400g coconut milk
  • 900g Water
  • 250g Prawns
  • 10 Tau Pok
  • Lime Leaves
  1. Wash rice till water is clear, set aside
  2. Press Saute on the Instant Pot and wait for pot to be slightly heated up before adding the butter
  3. Sear prawns and set aside
  4. Add some oil, fry lemongrass and rempah till fragrant
  5. Add in arborio rice and coat with rempah before pouring in the coconut milk, water and tau pok
  6. Cancel Saute
  7. Set valve to Sealing and cook at high pressure for 7 minutes, Quick Release
  8. Press Saute to thicken the risotto if necessary
  9. Garnish with prawns, tau pok and lime leaves
