Ingredients

For Red Bean Soup

200 g

red beans

80 g

white sugar

1 litre

Water

A pinch

salt

For the Mochi

1 cup

glutinous rice flour

1 cup

Water

1 tbsp

Cooking Oil

A pinch

salt

Recipe Categories

  1. For the Red Bean soup: Add the red beans and water in the Instant Pot inner pot.
  2. Close the lid and set to Pressure Cook on High for 15 mins. Lock the lid and turn the pressure valve to sealing.
  3. After Pressure cook cycle is over, allow the Instant Pot to depressurize without releasing the pressure vent.
  4. Remove Lid. Add in sugar and salt
  5. Set Saute for 5 mins. Give it a quick stir and allow the Red bean soup to reduce down.
  6. For the Mochi: In a bowl, mix glutinous rice flour, water, and salt into a smooth slurry.
  7. Heat oil in a pan and pour in the slurry. Stir till you get a sticky consistency.
  8. To serve, scoop red bean soup into a bowl and add a dollop of mochi.
